I know tuna is an acquired taste for some but you will love this dish if you like tuna! It is great because it fills you up but it reasonably low in fat and is great comfort food.

For 2 people
1 can of tuna in brine
1 onion
2 large carrots
2 knobs of butter
1/2 tbsp plain flour
half a pint of semi skimmed milk

White/ brown rice

Cut the onion and carrots up into small pieces. Melt the butter in a pan on a medium heat and add the onion first. Cook for a couple of minutes before adding the carrots. Let this cook for 4 minutes or so and then stir in the flour. This will aid in thickening the sauce. Season to taste and then add the milk slowly, stirring the whole time. Once all the milk is in turn the heat down a little and let it all cook.
Turn the oven on (around 170c will be fine) and let that heat up. Pour your sauce mixture into an oven dish and add the tuna (draining away the brine in the sink). Stir in and then put in the oven for 20 minutes.

Cook the rice and then check to make sure the dish is browning on top before removing and serving up.

I'll definately do this Stormy! We all love tuna :D

I do something similar to this but it has green beans and roasted red peppers...and you cook pasta instead of rice and the pasta goes into the dish and it all gets mixed in together...yummy....might post the recipe ;)
