Another delicious chicken dish...and quick to cook and prepare!
For 2 people
2 skinless chicken breasts
2 cloves of garlic
2 tbsp of olive oil
1 chicken stock cube
juice of a whole lemon
A little white wine vinegar
Pasta (penne, tagliatelle, spaghetti...it's your choice!) I usually cook penne to accompany this dish
You will need to prepare the chicken first but cutting it into slithers (about 3 inches long, 2 cm thick) Once you have done that, heat the oil in the pan on a medium heat and sear the chicken in the pan. Also, add the crushed garlic cloves to the mix (making sure the garlic does not brown). Then splash on some white wine (2 teaspoons worth) vinegar. Then add the lemon juice and season with some salt. Let that bubble a little before making up the stock cube with a regular sized mug of boiling water. Mix that so it is all liquid and add to the chicken mix. Let that all reduce down to a thicker sauce. This should take around 20 minutes. Keep an eye on it!
Meanwhile cook your pasta, check that it is seasoned to your liking and then serve up piping hot.
