This is a bit of a mixture but the flavours work really well together and I am a fan of mixing flavours like this...
For 2 people
CHICKEN
2 skinless chicken breasts
sachet/ pot of chinese seasoning
2 tbsp's olive oil
VEGGIES
courgettes, red and green pepper, onion
BBQ sauce from bottle/ jar
tbsp olive oil
MASH
4 large potatoes
1 small knob of butter
2 tbsps low fat cream
1 tsp of Dijon mustard
1 tsp honey
So to start with, cut your potatoes into chunks and add to a pan of boiliing water.
Meanwhile cut the chicken into bite size pieces and add the oil to the pan. Put the chicken in and cook until it start to brown. Then sprinkle some of the chinese seasoning over the top and turn the heat down, allowing it to cook.fry gently.
prepare your veggies by cutting them into strips and add the oil to the pan and cook on a medium heat. As they start to soften, add 2 tbsps of the BBQ sauce and turn the heat down..allowing them to soften further.
The potatoes should be cooked until they are soft. Drain them and get a small pan, heating up a small knob of butter and adding the cream, mustard and honey. Let that cook just enough to get it mixed in together. Mash the potatoes and add the cream mixture in with them, continually mashing. This shoud ensure they are creamy and flavoursome. Add some salt and pepper
Then you can serve...bon appetite!
