Okay back to proper food again , so I thought I'd share some of what I'm eating for dinner these days.
QUICK CHICKEN CASSEROLE
Skinless Chicken Fillet Thighs ( 4 large or 6 small )
Shallots ( 3 quartered )
Carrot ( 1 sliced )
New Potatoes or Salad potatoes ( 8, skin on ) - if in UK you can get Jersey Royals right now which are sensational - well I am Irish, I know my spuds ;)
Chicken Stock 500 ml ( however you have it, fresh, bouillion or concentrate )
Frozen peas ( 1 cup )
Small bunch of tarragon
Half Fat Creme fraiche 1 tbsp ( if you feeling daring - but it kinda like it without better )
Put chicken, shallots, carrot, potatoes and stock in a decent size stove top casserole dish. Bring to simmer and cover for 15 mins. Add peas and taragon and cook for another 10 mins.. Tada !
Dead easy and zero effort and delicious - the tarragon makes it

well, they're hardly tricky hehe I'm not a great cook but I'll have a go at most things - but after a day at work I want something ready in 15-30 mins from start to finish ( something healthy :) )
