Small portion Moroccan chicken with 3 tbsp couscous
Small can WW baked beans in tomato sauce

Small can tuna in springwater
A few pieces Moroccan chicken
Fava beans
Sun-dried tomato and feta stuffed chicken breast

Notes:
We now have Tim Tams at home (thanks to my sister) and I tried my best to resist! We've had them at home for almost a week now (different packs) and I hadn't touched them.
I really ate much more than I usually would today, I came back really hungry from the gym (see Exercise Journal), and have tried to keep it fairly healthy. I was too tired to cook afterwards, and came across the chicken on my way home. Each serving (1 chicken breast) is 290 calories and the nutritional info looked alright for something that I'm not going to have on a regular basis.
As of yesterday I have been working on increasing my food intake as I had been undereating. I know a breakfast bar is not ideal for breakfast, but it's wholegrain and is only 105 calories. I find that it's better than nothing, as we leave the house really early, and I would go without breakfast otherwise, on weekday mornings.
I am working on increasing my vegetable intake. I guess that will be my challenge. :bouncy:

looks good sapphire...any breakfast is better then none! i think after awhile the bar will not be enough to sustain you and maybe you'll have to grab some cheese or yogut as well B)
i don't think that looks like too much food...i think sometimes we need to eat moe then other days, it is all about listening to your body, and it looks like you mostly ate protein which is great! :huggs: i agree though, increasing your veg intake is a good idea.

Thanks Shy, I used to take fat-free yoghurt with me to uni every day for a long time, but stopped for a change. I think what contributed to my slow progress was cereal. I used to eat it as a snack as it's convenient. However, my challenge is to stay away from refined sugars (especially in cereal) and eat more veggies. So far so good, today I ate 97% wholegrain Weet-bix.
As of today (and for the next 2 weeks or so), I'm going vegan, with the addition of fish / seafood, for religious purposes. Weigh-in tomorrow - I hope the scale doesn't rebel against me, lol

Tuesday 7th August
Wholegrain Fruitbix bar
Spicy fish fillet (Chinese chili broth)
˝ small bowl steamed rice
Water spinach cooked with spring onions and ginger
Slice purple “yam” cake
Sushi:
2 prawn hand rolls
1 tobiko hand roll
Soy sauce
Pickled ginger
1 cup low-fat soy milk
2 ˝ weet-bix
3 prunes
˝ wrap: slice honey & soy tofu, hommus, salad leaves, 3 pieces semi-dried tomatoes, 2 herb marinated olives
Strawberry
Orange
7 prunes
Carrot sticks
Notes:
Today was a friend's birthday. We had lunch in Chinatown, and I got to try something new: purple cake! The Chinese call it "yam" and it tastes quite good, not too sweet. I just ate the sponge bit, and left all the cream on my plate. I am proud of myself for eating only half of the steamed rice, too.
Today's eating was a bit disorganised, as I wasn't at home for most of the day. It is kinda difficult to think of what to eat now that I'm more-or-less vegan, especially when I'm on the go. I can see myself upping my veg intake these days - it's the protein I'm worried about though, so I'm trying to eat beans and tofu. It's good I can still have tuna.

I think I may be eating too much fruit... Still trying to increase my veg intake. I hope I'm getting enough protein.

Thursday 9th August
Small can tuna in brine
Vegetarian foccacia: grilled eggplant, yellow and red capsicum, zucchini, pesto, cheese
Salad
Apple
Mandarin
Mixed seafood with bok choy, carrots, broccoli, and tofu in hot pot
Small bowl steamed rice
Chinese pancake with mashed red bean stuffing
3 bites Japanese seaweed salad

Notes:
Ate the foccacia filling, left most of the bread and cheese.
Tried a Chinese pancake for the first time (it isn't really a pancake). Shared it with my sister. I bought Japanese seaweed salad today from an Asian grocery for tomorrow's lunch. I will try to eat more tomorrow, but I don't have much of an appetite today, and was going to stop eating for the day after the apple and mandarin, then we went out for dinner. Slowly working on the veggies. I think yesterday I had a few days' worth of fruits, lol.

You are doing great Sapphire (and you are making me hungry reading your interesting list - especially the seaweed with bokchoy and the Sushi). Just keep an eye on the seaweed - although it's very healthy the sodium content can be very high.
sapphire - August 9, 2007 01:30 PM (GMT)
Thanks NicC! Good point about the sodium - today I resisted getting sushi on my way home because the soy sauce is so high in sodium. I don't need more water retention  I just thought I'd get the seaweed salad for a change, as I hadn't had it in months. At the moment I'm loving tuna!
