You will need:
2 chicken breasts, cut into bite size pieces
1 small red chilli, deseeded and finely chopped
1 garlic clove finely chopped (I use 2 but love garlic!)
1 lemon
150 grams of couscous
1 chicken stock cube with 175ml of boiling water
salt and pepper
1 red pepper cut up
1 red onion cut up
3 tbsps olive oil
2 tbsp balsamic vinegar
Firstly add the chopped chilli, 2 tbsps olive oil, garlic, some lemon rind and seasoning to the chicken and let it marinade for a while
Then bring the stock to the boil and add the couscous. Take off heat and cover until all the stock is absorbed.
Throw the chicken in a pan and fry off until cooked through completely.
Meanwhile get the couscous and squeeze in half a lemon. Add the chopped pepper and onion and add the balsamic vinegar and remaining tbsp of olive oil. Mix then place on warmed plate.
Get chicken and place on kitchen paper to soak up and remaining oil.
Add the chicken to the plate and voila, you have a lurvely, tasty salad that is filling and healthy!
