Just in case anyone wants to know how I made it (almost as easy as Teach' soup)
-1 package of fresh whole wheat lasagna noodles (I used Oliveri)
-cooked turkey (chicken would work too!) breast (I used leftovers)
-2 c. frozen veggies (I also added some Green peppers that needed to be eaten)
- 1 can Healthy Request (Campbells) ready-to-serve Mushroom soup (or any other cream soup) - I need to use the ready to serve because the condensed ones have MSG which I don't tolerate well
about 1-1.25 cups of cheese (I used grated cheddar leftover from New Years)
- Mix cut-up/shredded turkey meat with about 2 cups of veggies and the soup (or gravy if you have some leftover)
- make a layer of the lasagna noodles followed by 1/3 -1/2 of the turkey mix (depending on the number of layers) sprinkle with cheese, top with noodles followed by another layer etc.. Finish with cheese on top
1/5 of the recipe (a generous serving!) is about 650-675 calories about 7.5 g fibre and includes all the food groups (except PIZZA and CHOCOLATE :joker: )
