Title: Whole grain turkey nachos

This recipe makes enough for about 5-6 generous servings (about 650 cal/person depending on exact ingredients)
layer the following in a pan/casserole dish
1/2 bag multigrain tortilla chips (4 g of fibre/serving!!!)
2 c. leftover turkey, pulled into bit size pieces or shredded (I used 3.5 cups over 2 layers) - skin removed
(sprinkle with chili powder, taco mix or warm up in pan first and cook with onions)
grated cheese (I used Monterey Jack with Jalapeno but you can use a lower fat cheese if you wish, I used about 1/2 lb total over 2 layers)
1/2 bag multigrain tortilla chips
more leftover turkey
more cheese
bake at 350F until cheese it melted and turkey is warmed through
Can serve guacamole, salsa, sour cream and/or shredded lettuce etc on the side.
:lol: You can also substitute leftover chicken for turkey or use cooked lean ground beef. You could add green peppers, onions, etc if you are cooking the ingredients up in the pan before layering. Hope you enjoyed this session from NicGyver cooking school. :wacko:

That sounds good nic! Kind of similar to the taco salad my family makes...we just cook up some lean ground beef, add taco spices, kidney beans and onions, and put that on multigrain taco chips (as many as you want)...lettuce around the outside of the plate, and grated cheese to sprinkle on top. Then we have a bunch of raw veggies to add (as much as you want): cut up celery, green and red pepper, green onions, tomatoes.

Reading the post just makes my mouth water - Shy the taco salad sounds so good too
LOL - Teach - cooking with random ingredients is almost a hobby - makes it hard to give people recipes though...
