So how did grandma make unforgettable soup? My dh and I used to wonder for years but for the past 10 years or so I've made soup from scratch probably at least a couple of times a month.
What do you to?
A)If you have a big budget - buy a whole chicken toss in a big pot, add onions, garlic, cover with water, bring to a boil then simmer at low/med the crap out of it until the meat falls off/comes off the bone easily.
B)If you have a big family and small(er) budget - usually how I make soup - use leftovers of all kinds (turkey, bones from roast chicken, the veggies crunchy enough to eat raw or cut of ends of beans etc- I collect these in the freezer until I have a big freezer bag full -then it's soup day). Throw everything in, cover with water, bring to a boil, reduce heat to low/med simmer until veggies are soft and the meat falls off .
Note: don't be afraid to add extra water if needed
Then in both case A&B remove all the veggies and meat and bones (I usually pour through a strainer) into another big pot/bowl
Put the clear broth back into the soup pot. Collect all the lean meat and put back into pot. Add some freshly chopped veggies (carrots, cabbage whatever) or some frozen veggies, add precooked rice (leftover from the freezer?), noodles or whatever else you like in you soup (cook until noodles are done). Add salt, pepper and/or some bouillon mix to taste.
My kids and husband never ever complain on soup day and my children's friends have commented on how good the soup tastes...
Other pointers - I sometimes cook the soup at night and put the broth in the fridge until the next day (great if you want to remove any extra fat from the top)
