I cut up cucumbers (2 cups) and tomato (1 med hot house), tossed in a serving of cheese (little cubes, I used jalapeno jack but feta would have tasted great), some olives and some red wine vinegar. Yum! About 300 cal.

Hey! I am planning something similar today for lunch... tomatoes, green onion, a bit of cheese & a few wheat crackers w/ fat free Italian dressing! YUM!

i have a similar sort of salad everyday as part of my lunch :D I just throw in whatever veggies i have in the fridge at the time, sometimes lettuce/cabbage sometimes just tomato/cucumber..some sort of cheese, maybe almonds, and some low fat dressing 8)
