I lurve this recipe and it has hardly any fat in it at all (apart from the olive oil)
You will need (for 2 people)
2 skinless chicken breasts
a red and green pepper
2 cloves of garlic
3 tbsp of olive oil
can of plum tomatoes in their juice
2 glasses of white wine
Brown/ white rice )depending on your fancy)
Pour the oil into a pan and seal the chicken over a medium heat. Crush the garlic and add that to the pan once the chicken is sealed. Let that fry for a minute or two (just enough without letting the garlic brown) then add the 2 glasses of wine. Let the alcohol reduce for 3-4 minutes. Take off heat for a while whilst you prepare the peppers. Cut them into long slithers (about a cm thick) then put the chicken back on the heat and add the peppers. Then add the can of tomatoes with all the juice plus half a cup of water and let it reduce on a lower heat for about 20 minutes (until the sauce has thickened)
Add seasoning to taste
Cook your rice and voila! A yummy meal which is very low fat.
