this is a BIG hit at about every party I go to, or when guests come over to enjoy a treat before dinner... 1 lb fresh baby spinach 6-8 oz Feta Cheese (depends on your liking) 2 tsp fresh chopped garlic juice of half a lemon 1/2 tsp black pepper 2 egg whites (for the mix) 1 egg white for brushing phyllo sheets (sliced into strips the long way - 3 strips) Wilt your baby spinach down about 1/2 the way. Drain well and set in a bowl Crumble your feta down really small, add the rest of the ingredients, mix well.. Take a cutting board, wrap with plastic wrap nice and tight... Take some Pam, and spray the top of the covered board. Lay your first phyllo sheet, take about a tsp of the spanakopita mix and place on top of the sheet. Take the upper left corner, and fold DOWN to the right side, forming a triangle shape. Continue to fold in a triangle pattern. Spray lightly with pam as you go to avoid the phyllo from getting dry. Repeat until all of the mix is used. take your egg white on the side, and lightly brush the spanakopita triangles... bake in the oven on 360 until nice and light brown. Be careful not to burn them as they will cook rather fast... About 10 minutes or so at least to cook the raw eggwhites... Once completely cooked, remove from the pan and place on a paper-plate covered with a napkin.. this will help drain off any oil from the pam.. You can either eat while hot, or let cool before serving... |
