Ingredients: 1 onion, chopped finely 1 clove garlic crushed/chopped 2 tsp olive oil 1 cup dried lentils, picked over, washed and drained 2 cups beef broth stock 2 cups water 1 cup packed swiss chard leaves (or bok choy leaves, or spinach for that matter!) 1 tbsp chopped fresh cilantro 1/4 tsp cumin 1/4 tsp salt 1/8 tsp black pepper 2 tbsp lemon juice 1. Heat the olive oil in a medium saucepan, add the onion and garlic, sauteeing until soft, about 5 minutes. Add in the lentils, beef broth and water and bring to a boil, stirring occasionally. Simmer covered for 45 minutes on medium-low heat or until lentils are cooked. 2. Add in the swiss chard, cilantro, cumin, salt and pepper, stirring once. Cook until the swiss chard wilts, about 5 minutes. 3. Remove from heat and add the lemon juice, stirring to mix. 4. If desired, add grated mozarella cheese (about 1-2 tbsp per serving) to the soup when it is served. makes 4 servings of ~190 calories each (calories not including cheese). Yippee finally a use for Swiss Chard - I've been wondering for years what to do with it.
