Mango/Peach muffins

Rave reviews from my 7 year old...

1 3/4 c flour (I used about .5 cup of reg and the rest whole wheat)
1/2 cup white sugar
3 tsp baking powder
1 c diced mango/peaches (original calls for blueberries but I had frozen mangos and one small thingie of canned peaches so I drained the peaches using the juice as part of the liquid)
1 c milk (I used about 1/4 cup juice from the peaches and 3/4 cup of soy milk)
1/2 cup of canola oil (or melted butter or margarine)
1 egg
1/2 tsp salt

Stir together dry ingredients and add fruit.

Combine egg, milk (or other liquids) and stir into dry mixture just enough to moisten (Do NOT beat - this makes muffins too tough).
Put into muffin tins (lined or greased)

Bake at 375F for 20 min.

Makes 12 medium size muffins
about 215 calories each the way I made them
