I made this soup for my Hubby today. We both really enjoyed it. I haven't a clue on the nutrition facts. But it must be good with the two green veggies. I forgot to take a picture of it. But it sure was a pretty green color.. LOL Avocado Spinach Soup 1 Avocado 1/4 to 1/2 C. Spinach leaves, Cleaned and pat dry 4 Baby Carrots 1 Potato (Med.) baked w/skin, cut into chunks 1 2/3 C. 2% Milk Salt to taste Pepper to taste Red Pepper to taste Add all ingredients to *blender. Blend for 5 minutes until hot. Enjoy with oyster crackers. *I use VitaMix Blender so it cooks in the blender. Otherwise you need not blend for so long. Just blend all ingredients and then heat on stove. |

Yes I know Nic!! It has to be good for you right? I made it yesterday for me because Hubby is not into the avocados and I added onion powder because I am so allergic to real onions and celery.. OH WHAT A DIFFERENCE!! Made it in a larger batch too so I could just go and munch when I wanted to.. LOL Thank you Teach and Nic!
