Cheesy Salsa Rice; Side Dish

This is good and very easy.

Ingredients:

1 cup long grain rice
2 cups water
1 cup salsa (your choice as to type/spiciness)
1 cup cheddar cheese (i use 2% part skim)
salt and pepper to taste (if your salsa isn't tasty enough !)

1. Cook rice as per usual (boil water, add rice, bring to boil again, turn down to simmer for 20 minutes).
2. After rice is cooked and still hot, add salsa and shredded cheddar cheese...stir to mix all together.

That's it! you can add more salsa and cheese if you would like. This was really good- normally i am not a rice fan. Also i'm sure you could do this with instant rice instead if you prefer.

Yummmm sounds so good. I just love Mexican food. And wouldn't you know it... Hubby likes meat and potatoes... Ugggg Just my luck. Would like to try this one. TY for posting it Shygemini! :bouncy:

This looks really good and simple - wonder how I missed it... I will probably use brown basmati or red rice when I make it... Maybe add some shrimp for protein...


Also good replacement for instant rice (which has little fiber and nutrition) cook extra rice and store in the freezer until you need it "quickly". Also if you use white rice use PARBOILED because this process seals in the nutrients so all you are lacking is the fiber... Honestly though I love the brown basmati (Loblaws) and my 8 yr old really likes the red rice...

we tried spanish rice in my cooking lab and it was amazing...(i believe it is the same as red rice). I couldn't believe the flavor..delicious!
