Caramel Apple Muffins

Just made these - they lured my 12 yr son back out of bed lol. YUM

2 cups whole wheat flour
3 tsp baking powder
1/2 cup of soy milk (plain light or could use regular milk)
2 apples shredded
1/2 c. sugar
1 egg
1/2 cup butterscotch chips

Stir to moisten. Makes 12 muffins. Bake at 350 F for 20-25 minutes.
About 155 calories each.

They sound divine! YUM :D You made up the recipe, right? You should name them something like, 'Notorious Caramel Apple Muffins by Nic' :lol:

LOL - I based it on another recipe but it certainly has changed enough to make it mine ... and I confess I made a double recipe 5 of us plus I sent some with my daughter's friend (who is a picky eater but liked these...) so I handed her some on the way out the door...
