A friend of mine gave me this very easy no-bake recipe today:

1 cup of granola (use certified gluten-free if necessary)
1/3 cup honey
1/2 cup chocolate chips (can be substituted with trail mix for dairy free option)
1/2 cup of peanut butter
1/2 cup of coconut
1/2 cup of ground flaxseed
1/2 cup of dried cranberries (can use full cup of dried cranberries or coconut if you're not fond of one of these or substitute with raisins)
1 tsp vanilla

Mix well and refrigerate for 1/2 hour.
Form into balls and store in an airtight container in the fridge.
