Chickpea and Tomato Tagine Olive Oil Ground CUmin ( 1/2 tsp) Paprika ( 1/2 tsp) Ground Ginger ( 1/2 tsp ) Spanish Onion ( big and sweet ) 1 roughly chopped Red Bell Pepper 1 cubed Pumpkin 250g cubed ( i have used butternut squash here instead as well ) Saffron a few strands - better with it but not essential Tomatoes 5 ( roughly chopped ) Tomatoes ( tinned 400g) Chickpeas 400g ( tinned or soaked either is good ) Heat the oil in a decent size casserole, add cumin, paprika and ginger and stir. Add the veggies and brown them evenly ( about 5 mins ). Add 250ml of water ( put your saffron in the water if you have it) Bring to a simmer and cover, cook for 10 mins. Add chickpeas and cook uncovered for another 10 mins or so or until the veggies are tender -done. Kcals 294 Protein 13.2g Carb 42.2g Fat 9.2g Sat fat 0.7g Serves two happy veggies or two meat eaters on a holiday
