1 c. oatmeal 1/2 tsp salt 1/2 c. non-hydr. margarine or butter or healthy veg oil 1 c. whole wheat flour 1/2 tsp cinnamon 1/2 cup of ground flaxseed 1/2 cup of sugar - mix together in a bowl, pat half into bottom of a 8x8 pan - layer with: 2.5 cups of chopped (peeled - optional but definitely remove core!) apples - top with rest of mixture bake for 35 min at 350F Some notes from NicGyver's kitchen: I have made this with many different types of fruit (peach is especially good, blueberry can be mixed with other fruits), I usually make a triple batch in a 9 x 13 pan (needs longer to bake), my kids like more cinnamon, brown sugar can be used instead of regular, note to self must try chopped nuts instead of ground flaxseed FOR 1/9 of a pan (good size serving made with butter) - the saturated fat is much lower with non-hydr. margarine or veg oil. which I tend to use: Nutrition Facts Serving Size 86 g Amount Per Serving Calories 281 Calories from Fat 132 % Daily Value* Total Fat 14.6g 23% Saturated Fat 6.9g 35% Cholesterol 27mg 9% Sodium 206mg 9% Total Carbohydrates 34.7g 12% Dietary Fiber 4.4g 18% Sugars 14.5g Protein 4.4g Vitamin A 7% • Vitamin C 2% Calcium 4% • Iron 9% Nutrition Grade B- * Based on a 2000 calorie diet |

This sounds great! for posting. I am mainly interested in the apples & pears, as this is what I have in harvest at present. I buy most of my whole grain flours, & mixes from www.bobsredmill.com either by mail or internet. S&H is high for me from here, so some items I can find locally at Ukrop's.
