This is another favorite at my house with many variations (and a hit with guests)

Tonight I made:
whole wheat fajitas (2 wraps per person)

with shrimp, onions and red peppers (pan fried together add spices as desired)

toppings:

shredded lettuce
light sour cream
shredded cheese
and salsa

instead of shrimp you could also use strips of beef or chicken or pork - when we have company I make 2 or 3 different ones so everyone can choose what they like, you could also use tomatos and/or green onion and/or green peppers as toppings

yum yum!

i think it is always kind of fun to be able to put together your own food (which toppings you want on etc). This sounds alot like what i often order at 'kelsey's' actually!
