I cut up cucumbers (2 cups) and tomato (1 med hot house), tossed in a serving of cheese (little cubes, I used jalapeno jack but feta would have tasted great), some olives and some red wine vinegar. Yum! About 300 cal. |

Hey! I am planning something similar today for lunch... tomatoes, green onion, a bit of cheese & a few wheat crackers w/ fat free Italian dressing! YUM! |

very nice! i have a similar sort of salad everyday as part of my lunch I just throw in whatever veggies i have in the fridge at the time, sometimes lettuce/cabbage sometimes just tomato/cucumber..some sort of cheese, maybe almonds, and some low fat dressing

Love salads for lunch.. don't forget to separated each veggies in different zip bags, cos you don't want them become soggy and watery...:) |
